Check Out The New Look Of Café Fleur By Chef Sau!

Café Fleur, a well-known restaurant in Pampanga, recently reopened its doors with a new look! Established by one of the leading chefs in the industry Chef Sau Del Rosario, the avant-garde Kapampangan restaurant is now made lovelier, homier, and more accessible!

The new interiors of Café Fleur exude a homey provincial feel. Similar to its previous look designed by Chef Sau himself, blossoms and greeneries still make a great display inside the place. A small tree right that expands to the ceiling serves as Café Fleur’s new centerpiece.

The café first started out as a mere coincidence. Chef Sau was visiting a relative in Pampanga at the time and happened to pass by the ancestral house where the café is currently in. Built in 1898, the house was dilapidated, almost falling apart. As it was on the verge of being tear down, Chef Sau convinced the owner to preserve the house and turn it into a restaurant instead.

Café Fleur also moved to another place—just below Chef Sau’s farm-to-table restaurant called 25 Seeds! ‘Fleur’ is a French word that means flower, as the restaurant Chef Sau’s dedication to his late grandmother who was fond with various flora and fauna. The restaurant infuses flowers on their dishes which are not only ornamental but also edible.

What sets Café Fleur dishes apart is the incorporation of Chef Sau’s cooking techniques and travels he accumulated over time. “That’s why it’s called avant-garde because it’s an experiment on Kapampangan food and put it on the next level,” he shares. Some of the must-try dishes at Cafe Fleur are the Crispy Pork Belly + Truffled Macadamia Kare-Kare (P375) and the Crispy Okoy and Shrimps (P175).

Café Fleur is a memory lane to Chef Sau’s childhood and travels. The pots and pans in the restaurant are what Chef Sau used while he was working in Paris. “The nice thing about Café Fleur is the sense of rekindling, something that brings you back to the older times. It’s really nice when you reconnect with the people you know and love. That’s the beauty Café Fleur wants to give,” Chef Sau concludes.
